- The town of Lexington is the capital of NC barbecue, and this restaurant is the best of the best. Locals call it the Honey Monk, after the owner, Mr. Monk. Using a method passed down for generations, this native delicacy is pit cooked over hickory wood and then mixed with a secret vinegar-based sauce, also called dip. Actually, one can eat at any of the Lexington barbecue restaurants and enjoy it, though there are subtle differences and we fight over which one is the best in town.
